A technique that is far too often neglected, cooking rice perfectly takes a little vigilance. Long-grain or basmati rice should be light and fluffy when perfectly cooked. This ‘how to’ shows you the ropes.
1- Wash. Wash the rice in cold water until it runs clear.
2- Drain. Drain the rice and put into a medium saucepan.
3- Cool water. Pour in water so that it covers the rice by 1.5cm/5/8in. Add a generous pinch of salt.
4- Boil. Bring to the boil and then reduce the heat so that the water is simmering.
5- Cover. Cover with a tight-fitting lid.
6- Separate. White rice will cook in 10-12 minutes. When ready to serve, fluff the rice with a fork to separate the grains.
For a little colour to your rice and some subtle flavouring, try boiling in a little turmeric or paprika.
